Medicine; no higher chemistry in S5?

Read my post above. I address this point; what you say is untrue.

Glasgow requires Biology, Chemistry and one of Maths or Physics
Edinburgh requires Chemistry, and two of Biology/Maths/Physics
Aberdeen requires Chemistry, and two of Biology/Maths/Physics
St. Andrews require Chemistry, plus one of Biology/Maths/Physics
Dundee requires Chemistry and one other science. It is not clarified whether they include mathematics in this and you should should ask admissions.

Everywhere except Dundee allows you to take required subjects in S6 if you are missing them. Some only in certain circumstances (like school policy or timetabling preventing you).

Edit: Also, relatively few medical schools offer a premedical year.
